Breakfast of Champions

Nothing starts your day off right quite like a a good breakfast. (well, of course there's the "spending time with the Lord" aspect which REALLY starts the day off right, but I'm talking food, here.)

Over the years, my ideas of the perfect breakfast have changed. Growing up, I chose toast and tea every morning (like the good little New Englander I am!). Sometimes cinnamon toast... sometimes stove toast... but always toast and tea.

When I finally went off to college, I wasn't able to make stove toast in the cafeteria, and the regular "toaster variety" got pretty old. One day, desperate for a change, I went into the "hot breakfast" line to see what my options were. Oatmeal was right out, as were pancakes and waffles (blech). Scrambled eggs were barely palatable, but I chose those along with (gasp) something I knew I didn't like: grits. I'm not sure what possessed me to ask for them, but that day something magical happened. Grits became my new comfort food... buttery, salty, and totally wonderful. I think I wound up having grits just about every morning after that.

Nowadays I still hate traditional breakfast foods. (Tea is still a given, however.) Grits, while mighty yummy, make a big mess and just aren't worth the hassle of cleaning up afterwards. I normally just grab leftovers from the refrigerator, nuke 'em until they are piping hot, and pour cayenne pepper all over it. (yeah, I'm a little odd... I know)

But every now and then... when I'm in the mood for something different, I make what has become, for the me, the "breakfast of champions" -- that is, I won't have any sort of hunger pangs or sugar crashes or anything until after homeschooling is over. The recipe? An "everything" bagel, cut in half. Both halves are covered with a slice of turkey, a slice of tomato, a slice of provolone, and a sprinkling of oregano. Pop that under the broiler until the cheese is slightly browned and voila! The perfect breakfast! (for me, of course) I'd take a picture of mine, but it seems I've already inhaled it and all I have left is an empty plate (*grin*).

So, what's your idea of the perfect breakfast?

Hummus on raw veggies with 1 slice of my daughter's homemade, organic whole grain bread - it used to be pop-tarts and 4 slices of wonder bread toasted with gobs of butter and cheap jelly; but I'm reformed. And thinner. But I could be thinner still, if I'd knock off the weekly 60% Giardelli cocao chip-chaser...

That sounds SOOOOO GOOD!

I don't usually eat breakfast, I know I should, but coffee is usually the best I can do.

Adrienne, your daughter's bread sounds wonderful! We make a lot of bread around here and wow -- it goes QUICKLY!

(and if you're keeping your ghiradelli fix to once a week, I think you're doing great!!!)


Beth, for shame! *grin* No, seriously, I remember calling my mom (when I had two little ones)... crying... and telling her that all I had been able to eat was a spoonful of peanut butter with chocolate chips on it. I imagine you have to hit the ground running every morning with your two little ones, too!

I'm always torn between a bowl of homemade yogurt with homemade granola and raisins or egg, toast, and tea. It depends on how cold I am when I wake up, now that I think about it!

Amber, I wish I could eat breakfast stuff like that! Sounds delicious! Being hypoglycemic, though, I have to make sure I eat lots of protein or I go down, down, down rather quickly.
